The tradition of preparing food in clay pots
was known both to Romans and Native Americans.
It is as old as cooking itself.
So, keep it simple: pick your favorite vegetables,
meats and prepare a simple but valuable meal.
Before placing in the oven soak the pot in water.
The humidity trapped in porous walls will keep
the moisture in the food during roast. It will also
even its temperature while in the oven.
Pots come in two sizes: big for a big roast, small
for you and your favorite other.
The red clay was chosen for its hygroscopic qualities. We kept its surface unglazed to allow the humidity soak in and out its pores.
It is great but demanding and fragile material, as we have learnt testing different construction solutions.
